REMOVING PLASTIC FROM THE OCEAN

For every bottle of The Hidden Sea that we sell, we remove and recycle 10 plastic bottles from the ocean.

PALATE

Bursts with flavors of cherry, currant, and delicious juicy berries. The blend is
smooth, with expressive fruit sweetness and layers of vanilla and toasty oak. The wine
has great structure from fine tannins and a long powerful fruit finish.

AROMA

Red berries and fruit cake spice with generous oak.

COLOR

Bright crimson red.

VINTAGE CONDITIONS

Good winter rains and a warm spring resulted in a fantastic start to vintage. A series of very warm weather events put pressure on the early growing season, but the well managed vineyards made it through. A vintage of two halves; the first half of heat waves put pressure on winemakers and viticulturists alike, the second half allowed fruit to be picked at the optimum flavor ripeness.

WINEMAKING

Fermentation takes place in stainless steel fermenters, with the wines being tasted every day to monitor extraction and flavor development. Initially the parcels are kept separate but as soon as possible after vintage the blend is created and allowed to mature on French oak for approx 18 months.

VARIETAL COMPOSITION

85% Shiraz, 15% Cabernet Sauvignon.

WHY DO WE DO THIS?

Because we want to leave the world better than it was when we came in, and our wines carry a heritage born from the sea.

26 million years ago, South Australia’s incredible Limestone Coast was submerged by a vast ocean that was home to a thriving marine ecosystem.

A series of dramatic ice ages caused the ocean to recede, leaving the area rich with deep limestone deposits containing majestic marine fossils.

Ancient mineralised relics, and an extensive museum of marine life, now lay buried beneath the alluvial soils of this World Heritage site.

One of these relics is the fossilised remains of an ancient whale which contributes to the rich, fertile soil in our vineyard. It also provides a natural and unique filtration system – perfect for growing the grapes that produce our award-winning wine.

So that’s our story.

The sea wrote the first half, and you can write the second half with us.

We want to remove and recycle 1 billion single-use plastic bottles from the ocean.

And, we want to do it by 2030.

It’s an ambitious goal, but the sea doesn’t need half-measures.

It needs attention. It needs cooperation. It needs action.
